We like to think its our background in gardening and growing that make Artisan Glass a worthy partner to sell our ice creams in Läcköslott, we grow all the flowers, herbs and most of the fruit that we make our ice creams with in our Kravmärkt organic garden here in Dalsland. We kick off this season with five seasonal fruity flavours. All handcrafted to bring out the best of the fruit, whether roasted, freshly juiced, or home grown.  Sharp raspberry sauce for home made creme fraiche and a strong creamy blackcurrant with extra flavour from blackcurrant leaves. Spicy ginger made from fresh fairtrade organic ginger. Roasted rhubarb and choklad are vegan,  made with our own Krav organic rhubarb and fairtrade organic vegan choklad and cocoa. Artisan Glass is in Dalsland, a region of Sweden that we find utterly enchanting, about a third of the way up on the map and near the Norwegian border. We first came on holiday here in 2001 with three tiny children and a boat. It felt like going back in time to the 1950's , it was all wild meadows, forests,  with the huge lakes, the canal and secret woodland lakes connecting everything together . Roses

We want our summer flavour ice creams to taste of the garden. Those fleeting weeks in July where everything stops because of the heat and the scent of the roses and peonys hangs in the air.  Our garden is Krav organic and so we use all the flowers and herbs that we can in our ice cream.  We have been collecting roses, elderflower and meadowsweet  to make syrups and cordials for high summer ice creams and sorbets next week.    The best flavour roses are 'alba' and we have two huge bushes of Rosa 'Cuisee de Nymphe' , a sixteenth century rose, the most sensual and innocent of roses, its reportably...

  Our plan was to make the most refreshing, simple and delicious lollys we could. Taking inspiration from the fruit, berries and flowers that grow and flower together here in this part of Sweden that we call home. Using masses of Krav organic fruit  and simple homemade Krav organic cordials, made from flowering herbs and trees that we grow in our own Krav organic garden here in Steneby. We make our own creme fraiche and so can use masses of it in our very popular creme fraiche swirl ice creams. At the moment we.re making creme fraiche and lemon curd and creme fraiche and blackcurrant. We like the mixture of colours and textures through our transparent biodegradable pots.      We love lemon curd. We make our own with highest quality organic KRAV ingredients to my trustly English recipe, only eggs, Sicilian lemons, butter and sugar, really zingy and buttery. From the middle of the woods. When we first moved from London to the countryside in 1992(!!!!) we continued to travel up to  Londons first organic market at Spitlefields every Sunday to sell our herbs and plants that we grew in a tiny orchard nursery in the west of England . As an extra we got up really early and picked wildflowers and flowers that grew in the nursery,  made little bunches in the car journey and much to our surprise they became very popular and there would be a queue waiting to buy cowparsley and bluebells, Now twentyfour years later we,re still basically doing the same...

We 'force' our organic Krav rhubarb to get the delicate pink stalks that are more tender and with a less acidic flavour. This involves putting a large bucket over the crown to cut out as much light as possible.  A much more romantic method of forcing rhubarb has been employed by specialist farms in Yorkshire, in the north of England . The centuries of coal fires from industry and 'night soil' has developed a rich mineral soil in which it thrives. We always want to offer at least one dairy free sorbet in our repertoire, one  thats really heavy on the fruit and of course seasonal. We experiment on ways to cook them in an interesting way to enhance the flavour and so we can use less sugar. Everyone loves eating, cooking and food  in our house. Although We grow and forage for lots of it, the nearesr shop is not so near and as a consequence our 'cupboard is bare'  now and then. It is then and only then that you discover just how good the last scrapings of nutella are with ancient lingon jam. So by accident lingon and chocolate here are inseperable. They compliment each other so well. Our zingy ginger ice cream is made with generous amounts of organic fresh ginger that makes for a perfect winter dessert, it is somehow energising and healing, giving out super hot spiciness. We,ve been eating it with this classic pear ginger combination.   SAFFRON POACHED PEARS 4 Pears , peeled, cut in half with the cores removed. 6 Green cardammon pods, crushed. 1 large pinch of saffron. 150g sugar. Winter flavours

All the summer fruits have been picked and eaten. We still making our roasted rhubarb sorbet (Evenstorp Gård let us have some of their last harvest in september) but its nearly gone. So for a while now we have been experimenting  with staranise, cardammon, saffron, vanilla and chilli. Finding out what works with fruits from nearer the equator and California and rescuing delicious swedish lingon from being forever paired with moose meatballs.  These are our new winter flavours. Following on from the success of the Almandines in summer flavors and encouraged by our mentor , Cecilia at Lokal producerat i Väst and the team at Baldersnäs Herrgård, we have developed two winter varieties of Almandines that are now available in selected Ica and Konsum stores in and around u. Flavored with some of Swedens most popular spices, cardamom and saffron. New Shops

New Shops

We have had a fantastic first summer, supported by many local shops, cafes and restaurants. However we realized pretty  quickly that summer comes and goes in a flash so we have been working hard on getting our six most popular flavours in local supermarkets. We have been concentrating on stores that have a strong organic presence and are big on locally produced food. There has been a massive explosion in the growth of organic food bought in Sweden, with many local schools and hospitals concentrating on sourcing locally produced and organic ingredients.
